The 3 year old bee pollen is likely oxidizing slowly, and that is why its turned brown. Look for signs of spoilage - mold/mildew.
As for the new Spanish pollen, an odd smell is quite common and reflects the unique source of the pollen typically, although spoilage can be a concern as well.

Hello! I'd had some bee pollen for 3 years. It smells good but has turned brown... I tasted a couple granules and think it's good. since I wasn't sure, I bought another lb. of some Spanish bee pollen granules, they are beautiful yellow but smell like dog and even taste the same. The old stuff tastes and smells better. Opinion? Thank you for your time!!! :)
