Look of Summer Honey

Hello everyone,

I have a question regarding some honey I harvested this summer.

This is my second year of bee keeping and first year harvesting honey. I harvested honey in June of this year without issues; honey a clear dark golden colour. In early September, I had a second honey harvest and found the water content to be high, so I took immediate action to dry (don’t have a more accurate word) this honey. But I am now noticing that it appears to have plenty of air pockets and some sort of small particles on the bottom. The honey taste sweet and there is no scent to indicate fermentation. I’m very new to this and not sure what this could indicate. Maybe it’s nothing and just characteristics of raw honey.

I have attached photos and welcome all comments and feedback.

Many thanks,
Lynn
